Slow Cooker Apple Pork Tenderloin

Cook Time:  8 hours

Makes:  8 servings

Ingredients

2
pork tenderloins
1 cup (250 mL)
SunRype Pure Apple Juice
1/2 cup (125 mL)
balsamic or apple cider vinegar
2
garlic cloves, crushed
1 Tbsp. (15 mL)
honey
3 Tbsp. (45 mL)
brown sugar
4 Tbsp. (60 mL)
grainy mustard
1 Tbsp. (15 mL)
worcestershire sauce
1 Tbsp. (15 mL)
soy sauce
1/2 tsp. (2.5 mL)
dried thyme leaves (or 1 tsp. (5 mL) fresh thyme)
sprinkling of hot pepper flakes (optional)
1 cup (250 mL)
fresh mushrooms and/or apples, sliced (optional)
1 Tbsp. (15 mL)
cornstarch
1/4 cup (60 mL)
SunRype Pure Apple Juice

Instructions

Sear tenderloin (either on a barbeque or in a pan). Mix all remaining ingredients together in a slow cooker. Place the seared tenderloin in slow cooker. Cook on low for 8 hours. Prior to serving, stir 1 Tbsp. (15 mL) cornstarch into 1/4 cup (60 mL) SunRype Pure Apple Juice and add to slow cooker. Serve with roasted vegetables (sweet potatoes, parsnips and onions).

Optional:  Halfway through cooking time, add mushrooms and/or apples.
