Sandra's Pumpkin Apple Cheesecake

Bake Time:  1 hour

Makes:  8 servings


1 cup (250 mL)
graham cracker cumbs
1/4 cup (60 mL)
pecans, chopped
1/4 cup (60 mL)
butter, melted
3 packages
cream cheese
1 cup (250 mL)
packed brown sugar
1 cup (250 mL)
canned pumpkin
1 cup (250 mL)
SunRype Unsweetened Apple Sauce
large eggs
2 tsp. (10 mL)
pumpkin pie spice
1 tsp. (5 mL)


Preheat oven to 350°F (175°C). In a small bowl, combine crust ingredients and press firmly into the bottom of a springform pan. Refrigerate. In a large bowl, beat cream cheese until light & fluffy. Gradually add brown sugar, then beat well. Add pumpkin and SunRype Unsweetened Apple Sauce, then blend well. Add eggs one at a time, beating well after each addition. Add pumpkin pie spice & cinnamon, then beat until smooth and pour into crust. Place shallow pan half full of water on lower rack. Place cheesecake on middle rack. Bake 1 hour, then cool in pan 5 minutes. Remove side of pan and cool completely. Refrigerate several hours or overnight. If desired, serve with whipped cream.
