Kelli's Carrot Cake

Preparation

Kelli says that the added SunRype Apple Sauce makes this cake extra moist and this cream cheese icing is her favourite!

Bake Time:  35-45 minues

Makes:  1 cake

Ingredients

Carrot Cake Ingredients:
3/4 cup (180 mL)
sugar
1/4 cup (60 mL)
oil
3/4 cup (180 mL)
SunRype Unsweetened Apple Sauce
3
eggs
1/2 tsp. (2.5 mL)
vanilla
1 1/3 cups (325 mL)
all-purpose flour
1 1/2 tsp. (7.5 mL)
baking powder
1 1/2 tsp. (7.5 mL)
baking soda
1 1/2 tsp. (7.5 mL)
cinnamon
2
carrots, grated
Cream Cheese Icing Ingredients:
4 oz. (125 mL)
cream cheese
1/4 cup (60 mL)
margarine or butter
1 tsp. (5 mL)
vanilla
2 cups (500 mL)
icing sugar

Instructions

Carrot Cake Directions: Put all ingredients into a large bowl and mix well. Pour into a greased 9" x 13" (22.9cm x 33 cm) pan. Bake at 350°F (175°C) until the cake is done (test with a toothpick to ensure toothpick comes out clean).

Cream Cheese Icing Directions: While cake is baking, put all ingredients into a large bowl and beat. Once cake has cooled, ice.
