Cathy's Chicken a la Apple!

Preparation

Cathy says that this chicken recipe is one of her favourites. She serves it with quinoa or rice that has been cooked in SunRype Pure Not From Concentrate Apple Juice. She says that any leftover chicken (if there is any!) is great on a salad.

Prep Time:  15 minutes

Cook Time:  25-35 minutes

Makes:  4 servings

Ingredients

1 Tbsp. (15 mL)
olive oil
1
onion, chopped
1
garlic clove, crushed
4
boneless, skinless chicken breast halves
3
apples - peeled, cored & sliced
3 Tbsp. (45 mL)
dried currants or raisins
3 Tbsp. (45 mL)
pine nuts, walnuts or pecans (optional)
1/3 cup (80 mL)
SunRype Pure Not From Concentrate Apple Juice
1 1/2 tsp. (7.5 mL)
dried thyme
1 1/2 tsp. (7.5 mL)
fresh parsley,chopped
1
jalapeno pepper, seeded & chopped (optional)
sale & pepper to taste

Instructions

Heat oil in large, heavy saucepan over medium heat. Saute onions and garlic until soft and translucent. Move the onions to the side and brown the chicken breasts for 4 minutes on each side. Top the chicken with apples, currants/raisins and nuts. Pour in SunRype Pure Not From Concentrate Apple Juice. Season with thyme, parsley, jalapeno pepper, salt and pepper. Cover, reduce heat and simmer for 15-25 minutes or until apples are cooked and chicken is no longer pink inside.
