Banana Bread

Preparation

This Banana Bread recipe has no added sugar.

Makes:  1 loaf

Ingredients

ripe bananas, mashed
1/3 cup (80 mL)
SunRype Unsweetened Apple Sauce
2
large eggs
1/4 cup (60 mL)
water
1/4 cup (60 mL)
coconut oil
1 tsp. (5 mL)
vanilla
2 cups (500 mL)
whole wheat flour
1 tsp. (5 mL)
baking soda
2 tsp. (10 mL)
baking powder
1/2 tsp. (2.5 mL)
cinnamon
1/2 cup (125 mL)
chopped walnuts (optional)

Instructions

Preheat oven to 325°F (160°C). Mash the bananas until they are mostly lump free. With a hand mixer, beat together the bananas, SunRype Unsweetened Apple Sauce, eggs, vanilla and water until creamy. In a separate bowl, sift the flour, baking soda, baking powder and spices. Gradually add the dry mixture to the wet ingredients, beating well. Pour the batter into a gently oiled and floured 9 x 5 inch (38 x 26 x 3 cm) loaf pan and spread evenly. Bake for 45 minutes or until a toothpick is inserted and comes out clean. Cool completely on wire rack before slicing.
